Pancakes at their core should just be easy, I certainly don't want to be whipping out a whisk on a Sunday morning.
Pancakes are like an emotional vector, they're more of a tool to heal any ailments. Whenever I'm home, or it's myself or my friend's birthday morning, my Dad brings together his classic 3 ingredient pancakes.
A cup of milk, a cup of flour and one egg

Dad's Easy Peasy Pancakes
Ingredients
1 Cup of Plain Flour
1 Cup of Milk
1 Egg
Pinch of Salt
Butter
Instructions
Get yourself a large mixing bowl.
Add one cup of plain flour, one cup of milk and one egg. (For the cup I usually use a small glass or mug).
Add a pinch of salt.
Whisk all the ingredients together, adding small drops of milk to loosen the batter as you like (the runnier the batter, the thinner and lighter the pancake).
Pop the batter in the fridge until you're ready (chilling it helps it relax).
Get a nonstick pan with a large flat base, and bring it to medium-high heat.
Melt a knob of butter on the pan (this adds to the taste and helps it not to stick).
When the butter begins to sizzle, ladle one spoon of pancake batter onto the pan, and swirl the pan to even it out into a circle.
Let cook for 45 seconds to 1 minute and then see if the sides are coming away from the pan.
When the pancake will easily lift off the pan, flip it and cook again (it will need much less time on the second side).
When the pancake is ready, remove it with a plastic spatula and place it onto a piece of kitchen paper on a plate (this helps them not go soggy).
Repeat for each pancake, cleaning the excess butter with a kitchen towel, and adding a fresh dollop of butter.
